Thalassery, formerly Tellicherry, is located in the northwest of the Indian state of Kerala and gives its name to one of the very special and best types of pepper that India has to offer. The Tellicherry pepper is made from fully ripe red pepper berries, which are fermented with the whole pulp and dried. This makes the pepper black, but not deep black, but rather a pleasant deep brown color. Through this process, the aroma has developed even more clearly: the fully ripe peppercorns have taken on a decidedly nutty taste, but also a strong spiciness. This pepper is primarily used in dark meat such as game and beef, but also in chocolatey desserts.
