The White Fungus, also known as bear paws, is a curly white aromatic mushroom from the PR China Preparation: Soak mushrooms in water for approx. 1 hour. Cook for at least 10 minutes in fresh water. Drain the water, season to taste and fry with onions and soy sauce in the wok, for example.
