Kefalograviera hard cheese has a protected designation of origin and may only be obtained in certain areas of northern Greece from the milk of local sheep and goat breeds. The animals must be kept traditional, feeding on native grasses and herbs. The maturation of the cheese takes at least 3 months until it gets its strong, pleasant salty taste with a strong aroma. Kefalograviera is ideal for Saganaki. For this the cheese is turned into flour and fried. Garnished with lemon it is an excellent appetizer. It can also be rubbed over pasta instead of Parmesen or Grana Padano. Kefalograviera accompanies excellent red wines as table cheese.
