Only milk from the Vacche Rosse cows is used in this delicious Parmigiano. There is only one company that produces 4,000 such Parmesan cheese loaves a year. Until the 1960s, the very old red breed of cattle was the most common in the Emilia Romagna region. Popular with the farmers as a good worker and particularly appreciated for the tasty milk and meat. In the mid-1980s, the Vacche Rosse breed had almost died out and was replaced by the Friesian breed, which produced a lot of milk. Today, some farms are enabling a comeback for the Vacche Rosse and the excellent milk with its complex depth of flavor can again be processed into tasty products.
