This duck liver is a very special specialty of Rougie. It is matured in real champagne and seasoned with two aromatic peppers. Sarawak pepper comes from the Malaysian part of the island of Borneo and Maniguette pepper, also known as grains of paradise, comes from the western coast of Africa in Guinea. It has a beautifully crafted shape and good cut resistance and can therefore be presented very attractively.
