The cocoa for Callebaut Origine chocolates comes from regions of the traditional cocoa countries on the equatorial belt. From Ecuador, the variety Trinitario forms the basis for a dark chocolate with 70% cocoa and with a very strong aromatic smell and impressions of angelica, licorice and black liquorice. The first taste impressions are vegetable and rich in spices, again with licorice and angelica notes. Afterwards, the sweet, mild fruit taste of bananas outweighs, followed by a touch of freshness. Use: for glazes, for decorating and flavoring and for filling chocolates.
