Olizumo means olive juice in German. For the DOP extra virgin olive oil, only Picual olives are used, which are harvested in the largest national park in Andalusia, the Sierras de Cazorla (PDO), Segura y Las Villas, in the province of Jaen. The intensely golden-green oil smells of grass with notes of thyme, boxwood, fresh mint and fennel, underlaid with fig leaf aromas. On the palate it is initially sweet, then grassy-spicy notes unfold, which lead to a fruity taste in the final. The Picual olives are cold-pressed at Aceites Guadalentin from November onwards in a temperature-controlled manner. All oils go through numerous quality and taste tests.
