King cumin - also known as ajwain - belongs to the same family of plants as umbelliferous plants such as caraway, parsley and dill. It has a very strong taste with a clear thyme note. The smell is more like caraway. Its aroma goes well with fish or lentils and is often used for seasoning in vegetarian, north Indian cuisine. King cumin also fits very well in dishes for which caraway seeds or thyme are used, such as fried potatoes. It should be used rather sparingly.
