Wild Rosella is the Australian wild hibiscus, whose bright red, flower-shaped fruits, fleshy calyxes are used in many ways in bush food cuisine. The over 50 known species occur in dry land, the rainforest or the Sydney region. Their tart raspberry and rhubarb taste is appreciated in sauces, relishes, cake fillings, pies, ice creams, syrups and sorbets. As an edible garnish, the decorative fruits should be soaked in sugar syrup beforehand to reduce the tart taste.
