Grains of paradise were once used in Europe as a substitute for black pepper. Today they are almost only known in North Africa, for example as an ingredient in spice mixtures. They are very difficult to get in Europe. They are used in old recipes, but they also occasionally appear in sausage or mulled wine mixtures. They refine everyday dishes and go very well with vegetables or poultry. Grains of paradise have a sharp, warm, bitter aftertaste.
