Like the Japanese mountain pepper, the Chinese Sichuan pepper belongs to the rue family. The citrus fruit genus also belongs to this family. Sichuan pepper is very popular because of its exceptional aroma. Hardly noticeable at first, after a few seconds it literally explodes on the tongue and is slightly lemony and woody. Pepper, also known as Fagara, is obtained from the red pepper berry, dried and lightly roasted. The fruit walls / shells are usually used, not the seeds they contain.
