With house vinegar, Erwin Gegenbauer has revived an old, forgotten production method in the Viennese vinegar brewery. Wheat brandy flows over beech shavings, on which the bacteria that are necessary for converting alcohol into acetic acid adhere. Today, specially developed bacteria give vinegars a mild, spicy aroma. The basis of the various vinegars is always pure and water-clear beech shavings vinegar. In the aromatic house vinegars, light or dark fruit vinegars and concentrated grape juices are added to the aromatic house vinegars: noble tart, noble sweet and sweet and sour, resulting in corresponding aroma spectrums and colors. House vinegar is suitable for marinating, seasoning, refining and salad dressings.
