Fermented from the juice of highly aromatic quince. With its harsh fruitiness, this vinegar is particularly suitable for marinating root vegetables such as salsify or turnip, as well as to taste powerful ragouts and sauces. Also asparagus dishes, braised chicory or Asian vegetables with sprouts get a special touch with quince vinegar.
