Olive oil from southern France is rare in this country because it is only produced in small quantities. This AOP olive oil (protected origin) from the Vallee des Baux is obtained from the Salonenque, Beruguette (Aglandau), Grossane, Picholine and Verdale varieties and processed in a traditional way. For this purpose, the olives ripen in the absence of air for 2 days after harvesting before they are processed into a homogeneous paste, from which the extraordinary olive oil with very mild, ripe aromas is then obtained. Suitable for salads and goat cheese or warm Mediterranean dishes with tomatoes, peppers, aubergines, anchovies and very nice with raw fish.
