Olive oil from the south of France is rare in this country because it is only produced in small quantities. This AOP olive oil (protected origin) from the Vallee des Baux is obtained from the varieties Salonenque, Beruguette (Aglandau), Grossane, Picholine and Verdale and processed in a traditional way. The olives ripen for 2 days after harvesting in the absence of air before they are processed into a homogeneous paste, from which the extraordinary olive oil with very mild, ripe aromas is obtained. Goes well with salads and goat cheese or warm Mediterranean dishes with tomatoes, peppers, aubergines, anchovies and very nice with raw fish.
