The sweet chestnut is one of the most beautiful and striking trees in southern France and Italian Tuscany. In this plant, the male flower stalks provide the nectar, so lush that the whole flower stems appear sticky. Due to the high proportion of fructose, the honey remains liquid for a long time, has a strong, elegant aroma and is pleasantly slightly bitter. Sweet chestnut honey has a high fermentation and inhibin content.
