The strawberry tree grows in the Mediterranean as a bush, blooms white and belongs to the heather. Strawberry honey is an absolute rarity, because the bees are almost in hibernation at the time of flowering in autumn. In addition, there is often rainy, cool weather during this time. Thus, the harvests are extremely limited. The honey in the liquid state is light amber and candied quite firmly. It tastes extremely bitter-sweet and astringent. The bitter notes of this honey go well with sheep`s cheese, pancakes and sauces.
