Calazoon® is calcium lactate (E 327) and is used as an auxiliary agent for various texturizers (alginate, gellan and iota) that require ions (calcium or potassium) to form gel structures. These gels are perceived as being particularly heat-stable, solid yet flexible or quickly gelling and are of interest to the catering industry due to these properties. For some preparations, calcium- or potassium-rich ingredients such as milk or sour whey are sufficient. For special applications, such as forming gel capsules, the calcium or potassium concentration must be higher than in most common kitchen ingredients. Calazoon® is required for these applications, which is characterized by a very mild and pleasant taste. In addition to the calcium ions that are important for the preparation technique, the salt residue can significantly influence the sensory perception of the salt solution (slightly bitter, salty, mildly sour) and the reaction speed. The reaction speed is important when forming capsules, since the viscosity of the capsule mass and the speed of gel formation can control the success of round shapes.
