Citras is made from sodium citrate, which is mainly derived from citrus fruits. In the food industry, sodium citrate is commonly used to prevent discoloration of cut fruits and vegetables. It has the property to lower the acidity of food. Therefore, Citras makes it possible to produce sferificacion products technology for the production of spherical structures such as melon caviar with highly acidic ingredients.
