Emulzoon contains GMO-free soya lecithin (E322), which serves as an emulsifier, ie serves to combine fat and water. Emulzoon can be used to make greasy dressings (eg a vinaigrette) or mayonnaise. On the other hand, Emulzoon serves to produce airy foams that create an aromatic, melting mouthfeel. Example cranberry juice: -> mix 100ml cranberry juice + 20ml cranberry syrup. -> add 2 leveled serving spoons of Emulzoon -> whip up with the blender. -> Allow mass to set, then scoop off air and serve.
