Guarzoon® consists of guar gum (E 412), which is extracted from the seeds of legumes. Guar gum has properties similar to those of locust bean gum. It is used as a thickener and stabilizer, which gives liquids in particular a high viscosity and pseudoplastic behavior (almost like a gel). However, this texture can be destroyed by even low shear forces that occur when gently stirring, eating, shaking or even pouring the liquid. After a long standing time, the Guarzoon® solution regains its texture. Guarzoon® works in a wide pH range (acid-stable) and is used to produce viscous sauces or stable foams from vinegar and reductions, among other things. Plastic shapes can be achieved in sauces, for example, which allow herbs and other particles to be kept in suspension. Foams are obtained by foaming the viscous liquid using a cream siphon. In addition, Guarzoon® prevents the formation of ice crystals and gives frozen products a better mouthfeel. Unlike Locuzoon®, Guarzoon® does not form gels, but is more soluble, freeze- and thaw-stable and has better emulsifying properties, which is used in foam stabilization. The combination with Xanthazoon® enables strong, elastic textures.
