Locuzoon® consists of locust bean gum (E 410). In cold liquids, it acts as a thickener similar to xanthan for processing dairy products, desserts, fruit preparations, dressings and sauces. If Locuzoon® is dissolved in a little cold water and stirred well into boiling hot liquids, a heat-stable gel forms when it cools. Locuzoon® is effective in a wide pH range, i.e. it can also be used for acidic liquids and is not very sensitive to high ion or salt concentrations. In frozen gels, Locuzoon® delays the formation of crystals and thus ensures a more pleasant mouthfeel of frozen products. Locuzoon® can be used well in combination with Xanthazoon®, whereby a strong gel network can be formed.
