Maltodextrin has a low sweetening power and is almost tasteless. It can be used as a flavor carrier and absorb fats and oils. If you mix maltodextrin with, for example, walnut oil, you get a kind of loose, very tasty pastry. Maltodextrin can also be used to flour goose foie gras before roasting. The effect is a crispy, little sweet coating.
