Sucro is an emulsifier derived from sucrose which forms a sugar ester through a special link between sucrose and fatty acids. Due to its high stability, this emulsifier is used to bind oil with aqueous solutions. Sucro is water-like and must first be dissolved in water. This emulsifier also has astringent properties and allows the production of foam. Properties: Powdery, insoluble in fat. Cold-solubilized in water, faster soluble in heat. Then slowly add to the fatty medium.
Emulsifier. Emulsifier: sugar esters of fatty acids E473. Keep away from children. For the production of foams: dissolve with a whisk in the aqueous or alcoholic liquid; incorporate air into the surface of the liquid with a hand blender. For emulsions: first dissolve in aqueous medium; then gradually add to the fatty medium. For food, limited use. Not more than 1g / liter. Store cool and dry. Product from Spain.
