Xantana is obtained by fermenting maize starch with a bacterial species found in cabbage. Xantana has a high thickening power. It also has considerable properties as a suspending agent and, in heterogeneous mixtures, can hold small solids such as fibers and particles in suspension in the liquid. It can also hold gas particles in preparations. Properties: Powder cold and warm (up to 50 ° C) soluble. Even if the preparation is tempered, Xantana does not lose its thickening properties. Stir vigorously or add gentle movements until it absorbs moisture by itself.
