Xanthazoon® consists of xanthan (E 415) and is a fermentation product. It offers good thickening and stabilizing properties and is used as an additive in a wide range of dressings and sauces, baked goods, beverages, dairy products, fruit preparations and ice cream. Xanthazoon® is soluble in both cold and hot liquids and maintains the viscosity of the products over a wide temperature range, pH range (acid-stable) and against high salt/ion concentrations. It is also known for its emulsifying properties, prevents the masking of the aroma and improves the mouthfeel of viscous products. For culinary applications, Xanthazoon® can be used to stabilize foams, emulsions (dressings, sauces, etc.) and beverages and to keep small particles such as herbs or aroma capsules in suspension. Viscosity, stability and mouthfeel can be influenced and improved by additionally mixing in Locuzoon® or Guarzoon®.
