You can color fresh pasta dough or risotto black with squid dye. The tinta de calamar is injected into the water by the squid (Sepia officinalis) escaping from a gland to make itself invisible. Dosage for pasta: 2-5% squid color on the total amount of pasta dough, depending on the desired color intensity.
