Marzipan raw material of the finest taste, made from sweet aromatic Mediterranean almonds. Is particularly suitable for modeling. This mass is 2: 1 with invertase. At Lubeca, the whitened almonds are finely salted with sugar and water using granite rollers. This gives the marzipan a slightly fibrous structure for the right bite. The mass is then roasted in copper kettles. The so-called Maillard reaction takes place in conjunction with a catalytic effect of the copper. The marzipan thus gets its typical roasted aroma, with classic unmistakable taste. Slow cooling of the mass ensures the preservation of the valuable almond aroma.
