Maple sugar is the sugar extracted from the juice of the sugar maple. By drilling the logs, one gains the juice from which maple syrup is first formed by evaporation. Upon further evaporation, the sugar crystallizes out. From slightly light to powdered, this sugar is ideal for sweetening drinks and pastries. Maple sugar in the purified state corresponds to the usual sugar in terms of its composition and properties. The smell is reminiscent of sweet wood / caramel. As Creme Brulee sugar it is not suitable. Under intense heat, the sugar begins to pearl, then it burns immediately.
