Pickled lemons lend a variety of dishes and tagines as well as salads their characteristic spiciness. There is no substitute for this unique seasoning. Since the lemons are preserved in salt, it is usually not necessary to salt the dish in which they are used. For tagines, z. B., the soft shell of the pickled lemons is cut into small pieces and placed under the finished cooked dish, the jam-like pulp under the sauce stirred.
