Unlike green cardamom, which is considered a cooling spice, black cardamom is a warming spice. It is therefore a staple of every garam masala with cloves, cinnamon and black pepper. The seeds have a tar-like odor and taste of softwood with a tart, smoky, earthy note. They are used to give a pleasant depth to Masalas and Tandoori-style spice mixes.
