The Chinese Sichuan pepper belongs as the Japanese mountain pepper to the family of the rhombus plants. The genus of citrus fruits also belongs in this family. Sichaun pepper is very popular because of its extraordinary aroma. At first barely noticeable, it literally explodes on the tongue after a few seconds, to which it is slightly lemon-like and woody. The pepper, also called Fagara, is made from red pepper, dried and lightly roasted. Usually the fruit walls / bowls are used, not the seeds contained therein. The spice is popular in Chinese cuisine for meat dishes and as an ingredient in the Five Spice Powder.
