Violet mustard from Fam. Denoix in Brive-la-Gaillarde in the Perigord since 1839. The family has revived a historical recipe from the Middle Ages. He was Pope Clement VI`s favorite mustard. Since then it has been affectionately called the Pope`s Mustard, because these mustard stains were not noticed on the Pope`s purple robes. It is a very fine, mild mustard that is made with grape must and is more reminiscent of a delicate sauce. In the Perigord, it is very often served in restaurants as a dip with steaks.
