The core of the Kasumi MP blades is made of the finest Japanese VG10 steel - with cobalt and a higher carbon content - developed exclusively for the production of exceptionally high-quality kitchen knives. After forging, the blades are reheated to approximately 800°C, then rapidly cooled, hardening them to a Rockwell hardness of approximately 59-60 HRC. This hardness is considered optimal for kitchen knives, not only in Japan. It ensures excellent sharpness and a very long edge retention (resistance - the blade doesn`t dull quickly), while also allowing for easy resharpening with Sumikama sharpening stones.
