The Wittmanns and their ancestors have been winemakers in Westhofen since the 17th century.

Wittmann winery Time and calm are the ingredients for a great wine. This is exactly what the wines find in the vaulted cellar built in 1829. Philipp Wittmann lets his wines mature in 80 wooden barrels at a constant temperature and even humidity. The oldest is from 1890 and has already provided accommodation for many great generations. Each barrel contains the harvest of a single vineyard plot.

The Wittmann family converted all of their vineyards to organic farming back in 1990. This makes Wittmann one of Germany`s organic pioneers. The next step followed in 2004, the further development to biodynamic farming. The vines reward the effort with balance, the wines with depth and precision.

    BIO and dynamic

Those who work biodynamically are in close contact with their vineyards. The Wittmanns want their soils to be vital and the vines to grow in a balanced way. But there is no general recipe for balance; you have to deal with each individual location, the grape variety and the microclimate individually. That is why daily contact and observation of the vines is irreplaceable.
Because the soil on which the wines grow is the basis of their quality, the Wittmanns attach great importance to the activation of soil life through self-composted fertilizers. For Wittmann, biodynamic viticulture does not mean fanaticism, but reason and mindfulness. The gradual and selective hand-picking is the natural and logical climax of an intensive manual vegetation year.
Making wine is brain work with the heart
