    Falorni in Greve in Chianti is a historic butchers shop that seasonally spices and matures with noble mold. Fennel and Chianti Classico, wild boar and whole peppercorns are typical of them. The Tuscan people salt a bit more than others because they eat unsalted bread.

    With passion and care we strive every day to achieve an ever higher quality standard. By using a sophisticated computer system, we can ensure the traceability of all our raw materials and every stage of the manufacturing process.
    Long, slow curing allows natural aging of our sliced products without the use of techniques and enzymes that accelerate the process. In addition, we only use antibacterial agents that are essential for safe preservation, and always below the legal limits.
    We undergo the strictest quality and health checks of HACCP in collaboration with ASL veterinarians and accredited analysis and research institutes.
    We have recently received the international certifications IFS and BRC, world-wide standards for the processing of safety and quality.
