Noodles and pasta made from Senatore Cappilli wheat

The ear of Senatore Cappelli wheat can reach 180 cm and has a full and hard tuft. This type of wheat was so hard to cultivate in the past because it was so high that wind and rain could partially destroy production, which was replaced by lighter varieties. It was the most widely used wheat in southern Italy and the islands until the end of World War II. The name comes from Senator Raffaele Cappelli, who in early 1900 promoted the Riforma Agraria. The decision of the Pastificio Gentile is so important: The fragrance, the taste and the tenacity of Pasta Gentile are now unmistakable.

In order to best preserve the wealth of Senatore Cappelli, the Zampino family cooperates with the Mulino dei Fratelli Ferro in Campobasso, one of the longest-lived Italian mills. However, a company that has become modern in order to serve the market needs the powertrains to achieve the best possible quality.
